There are often moments when cooking every day is hard. This is especially true for those who work outside home, and have therefore little time to cook. These two meals can be used to alleviate the problem, for one only has to cook twice the amount of chicken and quinoa on the first day, and use half of it next day. This saves a lot of time, as one only has to cook once, however, the two meals will be different in taste and texture.
So, on the first day Lemon-marinated chicken with quinoa salad is on the menu. As you are cooking, use twice the amount of chicken and quinoa - 8 chicken breasts and 1,5 cup of dry quinoa. Use half and refrigerate the rest immediately. Note that this will not lengthen the cooking time much.
On the second day use the quinoa and chicken refrigerated on the previous day to cook Chicken-quinoa salad with feta cheese. This meal will take only 10 minutes to cook!
Note that both meals are very healthy. Both use chicken breasts, which are low in fat and high in protein, and quinoa, which is a good source of fiber and is also rich in protein. A lot of vegetables is used in both meals to make them even healthier and reduce the amount of calories consumed.
