Traditional Pasha

  4,5 pound cottage cheese
  2 cups sugar
  6 egg yolks
  2 eggs
  1,5 cup raisins
  1 pound butter
  vanilla or vanilla sugar


  Mix all ingredients carefully in a large saucepan, and cook, stirring frequently, until the mixture reaches a temperature of 90-95C.
  Line a pasha form with gauze, pour in the mixture and set it on a shallow pan or dish so that the extra moisture could drain. If you do not have a pasha form, use coffee filters, and set them on a colander to drain the extra moisture. This will affect the look but not the taste!
  Put it in a fridge for at least 12 hours.
