1 pound pork
3 tbsp olive oil
1 lemon, zest and juice
2 cloves garlic
2 tbsp chopped fresh parsley leaves
salt and pepper to taste
Cut the pork into square pieces approx. 1/2-3/4 inch large.
Prepare the marinade. In a large bowl mix the olive oil, lemon juice and zest, chopped garlic, parsley and salt and pepper. Add the meat and mix thoroughly until it is covered in marinade. Refrigerate for 8 hours or overnight.
Preheat the grill. Thread marinated pork pieces onto skewers. Cook for 10+15 minutes, frequently turning, until the meat is tender and slightly charred.
Serve hot, with boiled potatoes or rice and fresh vegetable salad.
