Cheesy paninis

Ingredients

  1 large chiabatta beread
  0,3 pounds mozzarella cheese
  2 large tomatoes
  fresh basil to taste
  handful of rucola leaves
  salt
  pepper
  4 tbsp oilve oil

Instructions

  Cut the bread horizontally in two. Thinly slice the mozzarella chhese and tomatoes. Wash the basil and rucloa leaves, chop roughly if desired.
  
  Put the cheese and tomato slices on top of the bread, top with rucloa and basil leaves. Add salt and pepper, sprinkle with olive oil. Cover with the second part of the bread.
  
  Quarter the panini. Grill using a sandwich grill or a wafer iron, until the bread is light golden. Serve immeditely.
