2,5 pound potatoes
6 tbsp sour cream (subsitite with plain yoghurt or heavy cream if desired)
1 tbsp breadcrumbs
3 tbsp butter
1 tbsp grated cheese
salt and pepper to taste
Wash and peel the potatoes. Transfer to a large pot, add water to cover, bring to boil. Cover and cook for approx. 20 minutes, or until tender throughout. Drain and let cool.
Heat the over to 350F.
Slice the cool pototoes into wedges. In a large pan heat the butter, and fry the potatoes on medium-high hear until golden.
In a separate bown combine sour cream, breadcrumbs, cheese, salt and pepper, mix well. Transfer the mixture and potatoes to a heatproof dish, stir to combine. Bake in the ovn, uncovered, for approx. 20 minutes, or until the chese is melted and a golden crust forms. Serve hot.
